1 package pectin powder
Several pounds of fruit

Steps:
Extract the Juice for Jelly
Clean the fruit and remove any stems or leaves.
If you're using berries or grapes, put them directly in a pot.
With apples or stone fruits, peel and core them, cutting them into small chunks.
Fill a pot about ⅔ full with fruit and just barely cover it with water.
Bring the pot to a boil and then reduce to a simmer.
Simmer for about 10 minutes.
Strain the juice through a strainer or cheesecloth. Strain until desired.
Making Jelly
Add fruit juice and a package of pectin to a large pot, and bring it to a rolling boil.
Boil the juice and pectin over medium heat for one minute, until completely dissolved.
Rise to rolling boil again. As the fruit mixture begins to thicken, stir frequently to prevent sticking and scorching.
Remove from the heat and carefully ladle into jars, leaving about ½ inch space at the top. Seal jars.
Allow to stand at room temperature for 24 hours to set before refrigerating.
Homemade jelly is easy to make, has a rich flavor, and requires no added sugar!
